Rainbow Hummus & Avocado Wraps

Easy, breezy, amd yummy!


Ingredients

  1. Head Butter Lettuce

  2. 1 cup your favorite hummus (can be store-bought or homemade!)

  3. 1 cup raw chopped walnuts

  4. 1 cucumber, diced

  5. 1/2 cup shredded carrots and/or beets

  6. 1 cup microgreens

  7. 1 avocado, thinly sliced

  8. Black pepper

  9. Himalayan sea salt

  10. fresh squeezed lemon


1. Rinse and dry your lettuce. Trim down the stem and wrap in paper towel and refrigerate until ready to use.

2. Prepare your hummus if not using store-bought. (Get out hummus recipe here)

3. Chop your cucumber, shred your carrots and/or beet, and rinse and dry the microgreens.

4. To build the wraps, lay out one large lettus leaf on a plate. Smear hummus into the center and top with diced cucumber, finely chopped walnuts, shredded carrots and/or beet, microgreens, and sliced avocado.

5. Season with a healthy shake of black pepper and Himalayan sea salt and 1/2 fresh lemon, squeezed.

6. Fold over like a burrito, tucking the ends in, and serve immediately!

7. Store leftover in glass jars in the fridge for 3-5 days to reassemble warps all week long.
