Potato and Cauliflower Curry

I am a POTATOE girl! I can literally eat them every day in every way. This soup is one of my go-tos for the colder months, but it’s not bland at all. The curry gives you a warmer season feel, but hardy style. The best part of this soup is the slow cooker! If you are a working adult, you can start this soup before you leave home, and when you get home from work your house will smell magical and a home cooked meal will be ready for you, made by you.


Ingredients

  • 1 box Golden Curry Medium/Hot

  • 2 (14 ounce) cans coconut milk

  • 3 cups veggie broth

  • 2 tablespoons soy sauce

  • 1 tablespoon pomegranate molasses (or regular molasses)

  • 1 pound baby potatoes, halved if large

  • 1 large head cauliflower, cut into florets

  • 1 cinnamon stick

  • 1/2 teaspoon cumin seeds

  • Himalayan Pink Salt and pepper

  • 1/2 tbsp Turmeric

  • 2 cups fresh spinach

Extras:

steamed rice, cilantro, and limes, for serving

fresh naan, for serving


INSTRUCTIONS

  1. Chop the potatoes in halves.

  2. Chop the cauliflower in bite sized pieces.

  3. In the bowl of your slow cooker, combine together the curry paste, coconut milk, broth, soy sauce, and molasses. Let is cook for about 20 minutes alone.

  4. Add the potatoes, cauliflower, cinnamon, and cumin. Season lightly with salt and pepper.

  5. Cover and cook on low for 5-6 hours or on high for 3-4 hours.

(After getting home from work/school just before you are about to eat)

  1. Stir the spinach into the curry, cover and cook 5 minutes until wilted.

  2. Divide the curry among bowls and top cilantro, and lime. Serve with rice and fresh naan. Enjoy


Witchy Tip:

Curry has a long history of mixed details and confused identities. If curry were a person, she’d definitely be a woman who doesn’t really know her past, but has gained pieces of herself along her journey. With that in mind if you are offering this recipe to your ancestors; I’d suggest maybe you make the bowl hearty and offer it to the people in your family you never met. The grandmother that passed before you even got here, or that missing person in the family tree. Write a small note telling them one thing about you, and say I’d like to get to know you better.
