Mashed potatoes with mushrooms and brussels sprouts

Ingredients - Mashed potatos

  • 4 lbs. potatoes * peeled and cut in halves or fourths

  • 8 cups of water

  • 1 sprig rosemary

  • 5 sage leaves

  • 4 tsp parsley

  • 1 tsp chives

  • ½ cup Vegan butter

  • 1 tsp garlic powder

  • ¾ cup canned thick coconut milk

  • ½ cup coconut room temperature (4 oz)

  • 1 tsp sea salt or to taste

  • ¼ tsp black pepper or to taste

Ingredients - Mushrooms & Brussel Sprouts

  • 2 cups (1 bag) of fresh brussel sprouts

  • 1 pack Chesnut Mushrooms

  • 1 tbsp Olive Oil

  • 1 tsp Himaylayn Pink Salt

  • 1 tsp Black Pepper

  • 1 tsp Turemric


MASH POTATOES:

Put the cut potatoes and herbs into a large stockpot.

Add water to the pot until the ingredients are covered by ½” water.

Cover the pot and bring water to a boil.

Once boiling, uncover and boil until the potatoes are cooked and fork-tender (about 25-35 minutes). They are done when they fall apart when touched with a fork.

Drain potatoes and place them back into pot.

Add the garlic and butter to the pot. Melt butter and sauté garlic for 1 minute.

Add milk and stir to combine.

Add chopped chives, salt and pepper. Stir until evenly distributed.

VEGGIES:

Chop the Brussel Sprouts in halves and wash.

Pour the Olive Oil into a 9inch frying pan.

Place the brussel sprouts into the pan, season and cover with a lid. (cook for 8-10 minutes) Cook until tender but allow a few to get crispy.

Add the mushrooms to the pan and uncover.

Continue to stir and mix until evenly cooked and tender.

Plate the mashed potatoes, and top with your sauteed veggies.

Enjoy.
